A perfect combination of herbs, olive oil, lemon, and garlic to freshen up that chicken breast you've been meaning to grill!
Summer is upon us! What really gets me into the summer spirit is grilling (and margaritas but that's for another day!). Chicken breasts are a favorite for grilling as well as they have endless marinade recipes so they really never get old.
This chicken recipe I'm about to share is healthy, easy, ready in about 40 minutes (when you include marinade time), and so CHEAP. Yes. In some cases, you only need to buy the chicken. I always have these herbs growing in my garden and lemons, olive oil, and garlic are staples in my kitchen so when you are really in a budget crunch this recipe is a great healthy choice with leftovers for a second night. That is my kind of dinner!
Serve this with whatever you have! We had some basmati rice and shelled edamame on hand but you can grill some vegetables, bake a potato, boil some rice, grill polenta slices, serve over lettuce, yada yada yada the list is endless.
Ingredients:
4 boneless, skinless chicken breasts, filleted or pounded 1/4 inch thick
1 tsp fresh sage, chopped
1 tsp fresh thyme, chopped
1 tsp fresh rosemary, chopped
1 tbsp fresh parsley, chopped
1 tbsp fresh basil, chopped
1 garlic clove, minced
1/4 cup Extra Virgin Olive Oil
Zest from 1 lemon
2 tbsp freshly squeezed lemon juice
1/2 tsp sea salt
Instructions:
1. Combine the herbs, garlic, olive oil, lemon zest, lemon juice, and salt in a large bowl or ziploc bag. Add the chicken breasts and be sure to coat all meat evenly with the mixture. Cover the bowl or seal the bag and let the chicken marinate at least 30 minutes or even overnight.
2. When ready to cook, heat the grill over medium heat and cook each side about 4 minutes (this will depend on the thickness of the breast. Cut with a fork to be sure no pink juice remains).
