When you don't know what to make for dinner, want to try something a little different, and most likely have a plethora of odd ingredients, make some Morroccan quinoa salad with chicken!
This is in no way authentic Moroccan food, so forgive me if I offend anyone! It is Moroccan "inspired" fare with certain flavors reminiscent of Morocco. This salad offers quite a punch in terms of fullness, healthiness, and vitamin rich(ness?) with a little spice thrown in. Instead of chicken you could always do shrimp, fish, or even some beans or tofu for a vegetarian take.
Ingredients:
1 lb chicken, cut into bite size pieces (or protein of your choice)
1 small butternut squash or pumpkin, peeled and cut into bite sized pieces
2 red peppers, diced
1 cup quinoa
Baby spinach, amount to taste
Lemon juice
Olive oil
Greek Yogurt, optional
Seasoning for Chicken:
1 tsp ground cumin
1 tsp ground ginger
1/2 tsp salt
3/4 tsp black pepper
1/2 tsp ground coriander
1/2 tsp cayenne
1/2 tsp allspice
1/4 tsp ground cloves
1. Preheat the oven to 400 degrees F.
2. Mix seasonings together for the chicken, set aside.
3. Place cut squash onto a baking sheet lined with foil or parchment paper, drizzle with olive oil and salt and pepper. Place into the preheated oven and cook for approximately 20-30 mins or until fork tender (but not mushy). This will depend on how big your pieces are.
4. Bring a pot of 2 cups of water to a boil over high heat, reduce to low and add the quinoa. Cover and simmer for about 20 mins or until quinoa is fluffy, all the water is soaked up, and little spirals are coming out.
5. Heatolive oil in a non-stick pan over medium high heat. Add the chicken. Cook flipping now and then until chicken is almost cooked through. Add the seasoning onto the chicken and cook until completely white inside.
6. To assemble: Place a small handful of spinach into the bottom of a single serving bowl. Add a scoop of quinoa on top. Put a scoop of red peppers and squash into the bowl. Add some chicken on top and squeeze some lemon juice over everything. Add a dollop of Greek Yogurt if using (really really good!). Enjoy!
